Level 42 Electric Box Iphone

Stavolta cambio pasticcere , giusto per assecondare i desideri del marito , ma non tradisco il mio Mitico ! Per sapere i retroscena e gli antefatti di questo tiramisù, leggete qui (se ne avete voglia, ovvio!). La ricetta è tratta da Dolci del sole , non è difficile, ma un pò lunga. Lui fa il mascarpone in casa, io l'ho acquistato già fatto al supermercato. Ho apportato qualche modifica, che vi indico tra parentesi. Con le dosi che vi riporto, ho realizzto un dolce per 10 persone, di 22X22 (il mio solito quadro di acciaio )


Per i savoiardi (dose doppia rispetto a quella indicata nel libro. Capirete alla fine il why. I, however, instead of biscuits, sponge cake I made a round of 28 cm)

1 whole egg 6 egg yolks 6 egg whites

200 g sugar 20 g

wildflower honey 140 g flour 40 g 00
starch potatoes 1 lemon peel

In a large bowl whisk for about 5 minutes with electric whips, the whole egg, egg yolks, 100 grams of sugar, lemon rind and honey until mixture is very fluffy.
Separately, whip the whites with the remaining sugar and a few drops of lemon juice. Sift flour and starch: in small doses to incorporate gently beaten di tuorli. Unire, infine gli albumi,  mescolando con una paletta lentamente dal basso verso l'alto affinchè non si smontiano. Se si decide di fare i savoirdi, versare il composto in una tasca da pasticciere con una bocchetta liscia media e formate su una placca, rivestita di carta da forno, dei bastoncini lunghi circa 6 cm. Cospargere di zucchero e cuoceteli in forno a 220° per 8 minuti. Se fate il pandispagna, versate il composto in una teglia da 28 cm imburrata e infarinata e cuocete in forno a 180° per 20 minuti.


Per la crema al limone-lemon curd , ho usato un'altra dose, per l'esattezza, questa :
4 lemons (juice + zest)
100 gr.
butter 225 gr.
sugar 2 whole eggs + 3 yolks

Melt the butter. Whip the eggs with the sugar and mix them with butter, add lemon juice and zest and continue as a cream. In seconds, your ready Lemon Curd. Possessed, cool and refrigerate. Will keep for about a month.


For wet limoncello: (I have slightly increased the original dose, even after this you'll understand why: I report what I did)
60g Water
60g sugar 100g of lemon rind 1 lemon

With a potato peeler derived from lemon peel and place in a saucepan over low heat with water and sugar. Let boil for 1 minute, then add the lemon. (After boiling water, I was practically all evaporated, so I weighed again and adding more until I get back to 40 grams)


For the mascarpone cream lemon :
350g mascarpone 160g
lemon cream, lemon curd
300g of whipped cream (to which I added 2 tablespoons of powdered sugar)
20gr 12gr limoncello
of gelatin sheets
3tuorli
80g sugar 2 lemons

Whip cream with 2 tablespoons of sugar. It should not be very firm, but semimontata.
Remove the lemon rind and boil in a saucepan over low heat for 5 minutes with the water. Be cool and remove the skins from the liquid. Then add the sugar and portare il tutto a bollore fino a 121°. Nel frattempo iniziare a montare i tuorli. Aggiungere a filo lo sciroppo di acqua e zucchero, e far montare fino a completo raffreddamento. Si otterrà un composto gonfio e spumoso.
A parte, fare ammorbidire la gelatina in acqua fredda e poi scioglierla nel limocello caldo.
In una ciotola capiente, unire il mascarpone e la crema al limone,  con movimenti circolari dall'alto verso il basso, e poi, gradualmente, la panna semimontata. Inserire, infine, la gelatina ancora calda.  Amalgamate il tutto e in ultimo unite i tuorli pastorizzati.


Montaggio del dolce :
Disporre uno strato di biscotti (nel mio caso il pandispagna tagliato a fettine) sulla base del quadro di acciaio (potete anche usare il cerchio di una tortiera apribile e farlo rotondo, oppure farlo in una pirofila come il classico tiramisù) e inzupparlo con la bagna al limoncello. Distribuire uno strato di crema. A questo punto Sal De Riso consiglia di fare un secondo strato decorativo di crema. A me piace, invece, sentire la consistenza del biscotto, per cui ho fatto un secondo strato di savoiardo-pandispagna inzuppato di bagna, seguito da un altro di crema (è per questo che ho raddoppiato la dose di savoiardo-pandispagna e aumentato quella di bagna). Con la sac à poche, Finally, I created the decorations. I garnished with some lemon curd, which, with its tangy flavor dissolves well the sweetness of this dessert. Let rest in refrigerator. The cake is better if eaten the next day. Better yet the next day (if there ever were to come). With scraps of leftover cream and sponge cake I made a version by the glass, also including some layer of lemon curd.
